Banana Bread

I am not a huge fan of banana bread made with 1 cup of oil. It just leaves a big greasy spot on my napkin, and my arteries cringe! This recipe is one I have developed over the years, and which my husband's co-workers at the steel mill ask for. It only uses 1/3 cup of butter rather than an entire cup of oil, so it has to be a little healthier, right?? :)

1/3 c
melted butter
1/2 c
granulated sugar
1/2 c
firmly packed brown sugar
eggs, beaten
1 tsp
pure vanilla extract
1 tsp
baking soda
1 tsp
1/2 tsp
1/2 tsp
1/4 tsp
1/2 tsp
1/2 c
walnut pieces
1 1/2 c

How to Make Banana Bread


  • 1Preheat oven to 350 degrees. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugars, eggs, vanilla extract, baking soda, cinnamon, cloves, nutmeg, ginger, salt and walnut pieces. Add the flour last, and mix just until combined.
  • 2Pour into a greased and lightly floured 8" or 9" loaf pan. Bake for one hour, checking at 50 minutes and every 5 minutes after that (since ovens can vary greatly, espcially when baking breads). Enjoy!
