banana bread

I am not a huge fan of banana bread made with 1 cup of oil. It just leaves a big greasy spot on my napkin, and my arteries cringe! This recipe is one I have developed over the years, and which my husband's co-workers at the steel mill ask for. It only uses 1/3 cup of butter rather than an entire cup of oil, so it has to be a little healthier, right?? :)

Ingredients

  • 3 or 4 - ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 2 - eggs, beaten
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/2 cup walnut pieces
  • 1 1/2 cups flour

How To Make banana bread

  • Step 1
    Preheat oven to 350 degrees. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugars, eggs, vanilla extract, baking soda, cinnamon, cloves, nutmeg, ginger, salt and walnut pieces. Add the flour last, and mix just until combined.
  • Step 2
    Pour into a greased and lightly floured 8" or 9" loaf pan. Bake for one hour, checking at 50 minutes and every 5 minutes after that (since ovens can vary greatly, espcially when baking breads). Enjoy!
