banana bread
I am not a huge fan of banana bread made with 1 cup of oil. It just leaves a big greasy spot on my napkin, and my arteries cringe! This recipe is one I have developed over the years, and which my husband's co-workers at the steel mill ask for. It only uses 1/3 cup of butter rather than an entire cup of oil, so it has to be a little healthier, right?? :)

Ingredients
- 3 or 4 - ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup granulated sugar
- 1/2 cup firmly packed brown sugar
- 2 - eggs, beaten
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/2 teaspoon salt
- 1/2 cup walnut pieces
- 1 1/2 cups flour
How To Make banana bread

Step 1Preheat oven to 350 degrees. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugars, eggs, vanilla extract, baking soda, cinnamon, cloves, nutmeg, ginger, salt and walnut pieces. Add the flour last, and mix just until combined.

Step 2Pour into a greased and lightly floured 8" or 9" loaf pan. Bake for one hour, checking at 50 minutes and every 5 minutes after that (since ovens can vary greatly, espcially when baking breads). Enjoy!
