Ingredients
- 3 cups unbleached flour
- 2 cups coarsely grated fresh coconut
- 1 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 2 - eggs
- 1 cup milk
- 2 tablespoons butter, melted (or oil)
- 1 teaspoon vanilla
How To Make bahamian coconut bread

Step 1Combine flour and next 5 ingredients in a large bowl.

Step 2In a separate bowl, beat together eggs and remaining 3 ingredients.

Step 3Stir egg mixture into dry ingredients.

Step 4Pour batter into a greased and floured 1-inch cast-iron skillet.

Step 5Bake at 350F for 45-60 minutes or until a toothpick inserted in the center comes out clean.
