Ingredients

  • 3 cups unbleached flour
  • 2 cups coarsely grated fresh coconut
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon nutmeg
  • 2 - eggs
  • 1 cup milk
  • 2 tablespoons butter, melted (or oil)
  • 1 teaspoon vanilla

How To Make bahamian coconut bread

  • Step 1
    Combine flour and next 5 ingredients in a large bowl.
  • Step 2
    In a separate bowl, beat together eggs and remaining 3 ingredients.
  • Step 3
    Stir egg mixture into dry ingredients.
  • Step 4
    Pour batter into a greased and floured 1-inch cast-iron skillet.
  • Step 5
    Bake at 350F for 45-60 minutes or until a toothpick inserted in the center comes out clean.
  • Step 6
    Cool in skillet.
