Ingredients

  • 3 c
    unbleached flour
  • 2 c
    coarsely grated fresh coconut
  • 1 c
    sugar
  • 1 Tbsp
    baking powder
  • 1 tsp
    salt
  • 1 tsp
    nutmeg
  • 2
    eggs
  • 1 c
    milk
  • 2 Tbsp
    butter, melted (or oil)
  • 1 tsp
    vanilla

How to Make Bahamian Coconut Bread

Step-by-Step

  1. Combine flour and next 5 ingredients in a large bowl.
  2. In a separate bowl, beat together eggs and remaining 3 ingredients.
  3. Stir egg mixture into dry ingredients.
  4. Pour batter into a greased and floured 1-inch cast-iron skillet.
  5. Bake at 350F for 45-60 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool in skillet.
