apple walnut bread (bread machine)
This is for a bread machine, but can also be shaped by hand if you desire. I have done this with half white whole wheat flour (King Arthur) and it works well, too. If your machine has a "sweet" setting, use that, as it will keep the high-sugar contents from getting dark too fast.

Ingredients
- 6 ounces unsweetened applesauce
- 3 1/2 ounces apple juice
- 1 teaspoon salt
- 3 tablespoons butter
- 1 large egg
- 4 cups bread flour
- 1/4 cup brown sugar, packed
- 1 1/4 teaspoons cinnamon
- 1/2 teaspoon baking soda
- 2 teaspoons active dry yeast (quick acting)
- 1/2 cup chopped walnuts
- 1/2 cup chopped dried cranberries (optional)
How To Make apple walnut bread (bread machine)

Step 1Measure all ingredients into the bread machine pan, in the order given. Select the "sweet" or "basic" setting. Start machine and operate according to manufacturer's instructions.

Step 2If desired to shape by hand, operate machine using "dough only" setting. Remove dough from machine when done, cover, and let rest 20 minutes.

Step 3Shape bread into a braid by dividing into 3 parts and rolling out into thin tubes, then braid together. Place on greased baking sheet. Brush with an egg wash. (Or place dough into well greased bread pan.) Allow to rise in warm place until doubled, about 45-60 minutes. Bake in a preheated 350 degree oven for 30 minutes. Remove immediately from pan and cool on wire rack.
