apple, spice and all that is nice loaf

Last weekend I wanted to make some individual loaves of bread but with all the things that I enjoy baked into it. I am sure someone else has come up with it..but just in case..here is what I like in a little loaf if sweetness.

Ingredients

  • 2 cups whole wheat flour or flour of choice
  • 1/2 cup sugar
  • 1 tablespoon baking soda
  • 1 teaspoon sea salt or kosher
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/4 pound real butter
  • 1 cup raisins
  • 1 cup chopped pecans
  • 1/2 cup dried cranberries
  • 1/2 cup brown sugar
  • 1/4 cup original soy milk-maybe a little more
  • 4 - small individual foil loaf pans
  • 1 cup chopped small pieces of peeled apples

How To Make apple, spice and all that is nice loaf

  • Step 1
    Mix all dry ingredients, except sugars, together and set aside. In another bowl add the sugars, and melt the butter until quite soft, but not liquid. Add the chopped apples and mix very well until all blended together.
  • Step 2
    Mix the sugars, butter with the flour and spices.Mix it all together until there is no flour that has not been blended in with the sugar/butter batter. It will be very thick.
  • Step 3
    Add little of the soy milk in small amounts, and mixing as you good. Make it like a bread dough. Knead it...Divide into three or four balls and form into small loaves. Place in those individual small loaf pans and place in over that has been preheated to 350 degrees.
  • Step 4
    Bake about an hour or until the knife comes out clean when inserted. Can use toothpick if you desire. When done, take out of loaf pan after resting five minutes. Butter the tops and cut you a piece, spreading it with butter. The flavors are wonderful!
