apple cider loaf
Based on a traditional beer bread recipe, I made this to use up some fresh apple cider before it "turned." Great results! If you don't have apple pie spice, just use a mixture of cinnamon, cloves, and nutmeg.

Ingredients
- 12 ounces apple cider or hard cider
- 1 large egg, beaten
- 3 1/4 cups bisquick baking mix
- 1/3 cup brown sugar
- 1 1/2 teaspoons apple pie spice
- 1/2 cup chopped dried apples, plumped in boiling water
- 1/2 cup dried cranberries, plumped in boiling water
- 1/4 cup softened butter
How To Make apple cider loaf

Step 1Preheat oven to 375°F. Grease bottom of 9x5-in loaf pan, and line bottom and long sides with parchment paper. Lightly grease the parchment paper. Drain the dried fruit well and pat dry with paper towels.

Step 2Beat together the cider, egg, Bisquick, brown sugar, and apple pie spice in a large mixing bowl until well blended. Stir in the dried fruit bits. Pour batter into prepared pan.

Step 3Bake 55 to 65 minutes in center of oven. Test with toothpick, which should come out clean. Cool 10 minutes in pan, then turn out onto wire rack to finish cooling. Remove parchment paper. Brush well with the melted butter while still warm.

Step 4Cool at least 15 minutes before slicing. Wrap leftovers and store in refrigerator.
