Ingredients

  • - 1/2 cup butter, softened
  • - 1 cup sugar
  • - 3 eggs
  • - 2 3/4 cups all-purpose flour
  • - 1 1/2 teaspoons baking powder
  • - 1/2 teaspoon baking soda
  • - 1 teaspoon salt
  • - 1 1/2 teaspoons ground cinnamon
  • - 2 cups sliced pink lady or fuji apples
  • - 3 tablespoons apple juice or apple cidar (not vinegar)
  • - 1 teaspoon vanilla
  • - 1/2 cup chopped pecans (optional)
  • VANILLA GLAZE
  • - 4 tablespoons melted butter
  • - 2 cups powdered sugar
  • - 2 tablespoons milk
  • - ¼ tsp vanilla

How To Make apple bread

  • Step 1
    In a large mixing bowl, cream the butter and gradually add the sugar, mixing well. Add eggs, one at a time, beating well after each addition.
  • Step 2
    In another bowl, mix together the flour, baking powder, baking soda, salt and cinnamon; gradually add to creamed mixture. Stir in cider or apple juice and vanilla. Next chop the apples to small bite sized pieces. Then with a spoon, fold in the apples and pecans.
  • Step 3
    Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350 degrees for 1 hour or until wooden pick inserted in center comes out clean. Cool in pan for 10 minutes and then remove from pan and allow to cool completely before glazing.
  • Step 4
    To prepare glaze combine the powdered sugar, vanilla, and butter. Slowly add milk, stirring until smooth. Extra milk can be added if you like your glaze thinner.
  • Step 5
    NOTE: you can also use fresh or canned peaches for this recipe. Instead of apple juice use orange juice.
