Ingredients
- - 1/2 cup butter, softened
- - 1 cup sugar
- - 3 eggs
- - 2 3/4 cups all-purpose flour
- - 1 1/2 teaspoons baking powder
- - 1/2 teaspoon baking soda
- - 1 teaspoon salt
- - 1 1/2 teaspoons ground cinnamon
- - 2 cups sliced pink lady or fuji apples
- - 3 tablespoons apple juice or apple cidar (not vinegar)
- - 1 teaspoon vanilla
- - 1/2 cup chopped pecans (optional)
- VANILLA GLAZE
- - 4 tablespoons melted butter
- - 2 cups powdered sugar
- - 2 tablespoons milk
- - ¼ tsp vanilla
How To Make apple bread

Step 1In a large mixing bowl, cream the butter and gradually add the sugar, mixing well. Add eggs, one at a time, beating well after each addition.

Step 2In another bowl, mix together the flour, baking powder, baking soda, salt and cinnamon; gradually add to creamed mixture. Stir in cider or apple juice and vanilla. Next chop the apples to small bite sized pieces. Then with a spoon, fold in the apples and pecans.

Step 3Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350 degrees for 1 hour or until wooden pick inserted in center comes out clean. Cool in pan for 10 minutes and then remove from pan and allow to cool completely before glazing.

Step 4To prepare glaze combine the powdered sugar, vanilla, and butter. Slowly add milk, stirring until smooth. Extra milk can be added if you like your glaze thinner.

Step 5NOTE: you can also use fresh or canned peaches for this recipe. Instead of apple juice use orange juice.
