There are so many great recipes out there for Blueberry Breakfast Cake, but I love the simplicity of this one. Nevermind that it tastes amazing. It's an Amish recipe, so no electric mixer was involved - but you certainly can use one. I do it the hard way, because my Kitchenaid only has one mixing bowl. The best thing about this cake is the light sponge texture due to the beaten egg whites. You can use any kind of berry, but the heavier ones tend to sink to the bottom. Still tastes great, though!

Ingredients

  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups all purpose flour, sifted
  • 2 large eggs, separated
  • 1 1/4 cups sugar
  • 1/2 cup shortening
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon baking powder
  • 1/2 cup whole milk

How To Make amish blueberry breakfast cake

  • Step 1
    Preheat oven to 350 degrees. Grease and 8x8 baking dish.
  • Step 2
    Rinse the blueberries and pick clean. Drain very well. Place them in a large bowl and toss them with a small amount of the flour.
  • Step 3
    Separate the egg whites from the yolks. Beat the egg whites in a large bowl, slowly adding 1/4 cup of the sugar. Whisk until stiff peaks form. Set aside. (NOTE: it's not the Amish way, but you can cheat and use an electric mixer for this!)
  • Step 4
    In a separate bowl, cream the shortening. Then add the salt and vanilla. Add the remaining 1 cup of sugar and the egg yolks. Beat until light and creamy. (NOTE: again, it's ok to cheat with an electric mixer).
  • Step 5
    In another bowl, sift the remaining flour with the baking powder. Add the flour mixture to the creamed mixture alternately with the milk, until everything is fully incorporated.
  • Step 6
    Fold in the beaten egg whites, then fold in the floured blueberries. Pour into the prepared pan, and sprinkle a tablespoon of sugar evenly over the top of the batter.
  • Step 7
    Bake for 1 hour, or until a cake tester or wooden toothpick inserted into the center comes out clean.
