Ingredients

  • 1/2 c
    butter, softened
  • 1 c
    sugar
  • 2
    eggs
  • 1 c
    mashed bananas ( 2 medium)
  • 1/4 c
    milk
  • 1 Tbsp
    grated orange peel
  • 1 tsp
    vanilla
  • 1/2 tsp
    almond extract
  • 2 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 c
    coconut
  • 1/2 c
    chopped nuts
  • 1/2 c
    crushed pineapple

How to Make Aloha Quick Bread

Step-by-Step

  1. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in banana, milk, orange peel and extracts.
  2. Combine flour, baking soda and salt; add to the creamed mixture just until moistened. Fold in coconut, nuts and pineapple. Transfer to a greased 9x5 inch loaf pan.
  3. Bake at 350 for 1 hour and 20 minutes or until tested clean near the center. Cool for 10 minutes before removing from pan to a rack.
  4. Makes 1 loaf.
