I came up with this recipe while trying to use up buttermilk which I don't usually keep on hand...but with the way my family loved this bread, buttermilk may become a pantry staple! Its a dense, sweet bread perfect for holiday gatherings and get togethers. I hope you enjoy it.

Ingredients

  • 2 cups sugar
  • 3/4 cup vegetable oil
  • 4 - eggs
  • 1 1/2 teaspoons coconut extract
  • 1/2 teaspoon almond extract
  • 3 cups flour
  • 1 teaspoon non-aluminum baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 1/2 cups sweetened coconut
  • 1 cup chopped almonds
  • 1 cup chocolate chips

How To Make almond joy bread

  • Step 1
    In the bowl of your mixer, blend the sugar, oil, eggs and extracts.
  • Step 2
    In a separate bowl, combine the flour, baking powder, baking soda and salt: add to the sugar mixture, alternating with the buttermilk till just moistened.
  • Step 3
    Fold in coconut, chocolate chips, and almonds.
  • Step 4
    Pour into 2 greased loaf pans and bake at 325 for 60-65 minutes. Done when toothpick comes out clean. Cool for 10 minutes in pans before removing, then cool on wire racks.
  • Step 5
    Yields: 2 loaves
