almond joy bread
I came up with this recipe while trying to use up buttermilk which I don't usually keep on hand...but with the way my family loved this bread, buttermilk may become a pantry staple! Its a dense, sweet bread perfect for holiday gatherings and get togethers. I hope you enjoy it.

Ingredients
- 2 cups sugar
- 3/4 cup vegetable oil
- 4 - eggs
- 1 1/2 teaspoons coconut extract
- 1/2 teaspoon almond extract
- 3 cups flour
- 1 teaspoon non-aluminum baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 1/2 cups sweetened coconut
- 1 cup chopped almonds
- 1 cup chocolate chips
How To Make almond joy bread

Step 1In the bowl of your mixer, blend the sugar, oil, eggs and extracts.

Step 2In a separate bowl, combine the flour, baking powder, baking soda and salt: add to the sugar mixture, alternating with the buttermilk till just moistened.

Step 3Fold in coconut, chocolate chips, and almonds.

Step 4Pour into 2 greased loaf pans and bake at 325 for 60-65 minutes. Done when toothpick comes out clean. Cool for 10 minutes in pans before removing, then cool on wire racks.
