I make this recipe all the time for potlucks, and am always asked for the recipe. It's easy, tasty, and my family loves it! It's almost like a quiche, but I serve it as an appetizer. Enjoy!!

1 1/2 c
coarsely shredded, unpeeled zucchini
1 Tbsp
minced onion flakes
1 Tbsp
dried parsley flakes
1 Tbsp
dried basil
1 oz
grated parmesan cheese
1/8 tsp
garlic powder
2 Tbsp
plus 2 teaspoons vegetable oil
eggs, beaten
3/4 c
all purpose flour
1 tsp
baking powder
1 oz
shredded cheddar or swiss cheese

How to Make Zucchini and Cheese Bread


  • 1Preheat oven to 350. In a large bowl, combine zucchini, onion flakes, parsley flakes, dried basil, parmesan cheese, garlic powder, oil, and eggs. Mix with a fork or wire whisk
  • 2Combine flour and baking powder. Stir into zucchini mixture, mixing well.
  • 3Place mixture into a 9 inch round nonstick cake pan or one that has been sprayed with a nonstick cooking spray. Sprinkle evenly with cheddar or swiss cheese.
  • 4Bake 40 minutes, or until a toothpick inserted in the center comes out clean.
