I make this recipe all the time for potlucks, and am always asked for the recipe. It's easy, tasty, and my family loves it! It's almost like a quiche, but I serve it as an appetizer. Enjoy!!

Ingredients

  • 1 1/2 cups coarsely shredded, unpeeled zucchini
  • 1 tablespoon minced onion flakes
  • 1 tablespoon dried parsley flakes
  • 1 tablespoon dried basil
  • 1 ounce grated parmesan cheese
  • 1/8 teaspoon garlic powder
  • 2 tablespoons plus 2 teaspoons vegetable oil
  • 2 - eggs, beaten
  • 3/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 ounce shredded cheddar or swiss cheese

How To Make zucchini and cheese bread

  • Step 1
    Preheat oven to 350. In a large bowl, combine zucchini, onion flakes, parsley flakes, dried basil, parmesan cheese, garlic powder, oil, and eggs. Mix with a fork or wire whisk
  • Step 2
    Combine flour and baking powder. Stir into zucchini mixture, mixing well.
  • Step 3
    Place mixture into a 9 inch round nonstick cake pan or one that has been sprayed with a nonstick cooking spray. Sprinkle evenly with cheddar or swiss cheese.
  • Step 4
    Bake 40 minutes, or until a toothpick inserted in the center comes out clean.
