whole wheat bread

Many years ago I couldn't find a whole wheat bread that didn't taste like sawdust, so I fiddled with a white bread recipe (took several tries) and this is what worked. There is nothing better than warm homemade bread slathered with butter! I made this bread for my family when my children were growing up. I always had to make four loaves because the first loaf would be gone before it was cool.

Ingredients

  • 1 package active dry yeast
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 2 tablespoons molasses
  • 3 tablespoons real butter or shortening
  • 2 teaspoons salt
  • 1 1/4 cups water
  • 2 cups wholewheat flour
  • 2 cups all-purpose flour

How To Make whole wheat bread

  • Step 1
    Soften yeast in 1/2 C. warm (110-115 degree) water
  • Step 2
    In a saucepan heat 1 1/4 C. water, brown sugar, molasses, salt and butter or shortening till just warm. (115-120 degrees) and butter or shortening is almost melted. Turn into a mixing bowl. Stir in 2 cups of whole wheat flour. Beat well. Add the softened yeast mixture and stir till smooth.
  • Step 3
    Cover and let rise in a warm spot till soft and bubbly. About 1/2 hour.
  • Step 4
    Stir the dough down and add as much of the all-purpose flour as you can with a (large) spoon. Turn out onto a lightly floured surface. Knead in enough of the remaining all-purpose flour to make a moderately stiff dough. (6-8 minutes)
  • Step 5
    Place in a large greased bowl, turn once, cover and let rise in a warm spot till doubled in size. (about 1 1/4 hours)
  • Step 6
    Pre-heat oven to 375 degrees
  • Step 7
    Punch down dough, divide in two and shape into loaves. Cover and let rest for 10 minutes while you grease two 8X4X2 loaf pans. Place loaves in greased loaf pans.
  • Step 8
    Bake in preheated 375-degree oven for 25 minutes. Tent loaves with foil and finish baking another 20 minutes.
  • Step 9
    Cool in pans till you can touch the loaves. If you like a soft crust, brush melted butter over top of loaves while still warm. Wrap tightly when completely cool.
