white bread with country gravy and diced tomatoes
We used to have white (light) bread and gravy for breakfast as a kid. Bread was 10 cents a loaf from the commissary/grocery store on the various military bases near where we lived back in the 1960's. I still crave this childhood favorite as an adult and make it once or twice a month. This version uses a packet of Pioneer Country Gravy Mix but you can easily make country gravy from scratch. It makes a mouth watering, easy meal. I use Roma tomatoes from the grocery store until fresh local tomatoes are available in summer.

Ingredients
- 1 package country style gravy mix, Pioneer brand (2.75 oz)
- ingredients listed on the pkg to make gravy
- 16 slices white bread
- 8 Roma tomatoes
How To Make white bread with country gravy and diced tomatoes

Step 1Make the gravy according to pkg directions. I use Pioneer Brand but you can use any brand of country or peppered gravy mix.

Step 2Place 2 slices of bread on a plate (1 serving).

Step 3Dice 1 Roma tomato per serving and add it to the plate with the bread. The tomato should come to about 1/2 cup diced. It can even be added to the gravy mix while it cooks to make a creamy, lite tomato gravy.

Step 4Spoon gravy over bread and tomatoes. (About 1/4 cup of the gravy is a serving.)

Step 5If making this for one serving, just use 2 slices of bread, 1 tomato, and about 1/4 cup of the gravy. Store the gravy in the fridge in a tightly covered container. It should keep for a week. You could have White Bread and Gravy every day for a week. It is good served with poached, fried, or scrambled eggs too.
