This was a recipe from a southern breakfast party Mom had...with pound cake, scrambled eggs, beaten biscuits and probably something more than just coffee to drink. I'm sure there was fruit as well as bacon or sausage too! Nope, I was wrong...Fried Chicken Livers were the 'meat' she chose. I would vote bacon or sausage myself!

Ingredients
- 2 cups cornmeal
- 3 cups milk
- 1 teaspoon salt
- 1 teaspoon baking powder
- 3 tablespoons butter
- 4 medium eggs
- dash sugar
How To Make spoonbread, mom's

Step 1Stir milk into cornmeal in a saucepan. Place over moderate heat and stir until thick as mush. Remove from heat and add salt, baking powder and butter. Beat egg yolks in a separate bowl and stir into cornmeal mixture. Beat egg whites in another bowl until they peak and add sugar. Fold into the mixture. Turn out into greased casserole and bake about an hour until browned.

Step 2Note: Mom didn't put temperature, so perhaps 350? But check before an hour in case that cooks faster!
