This is Texas spoon bread. Southern spoon bread usually has some corn and sometimes bacon or bacon grease in it. It's often served with Texas BBQ.

Ingredients

  • 1 cup cornmeal
  • 3 tablespoons butter
  • 1 1/2 cups boiling water
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 3 large eggs, lighty beaten

How To Make spoon bread

  • Step 1
    Combine the cornmeal and butter in a medium bowl. Add the boiling water, stirring until the butter melts. Cool to room temperature.
  • Step 2
    Combine the sugar, baking powder, and salt; add to the cornmeal mixture, stirring well.
  • Step 3
    Combine the milk and eggs, stirring with a wire whisk until blended. Add the milk mixture to the cornmeal mixture. Stir well.
  • Step 4
    Pour the batter into a lightly greased 1 1/2-quart casserole. Bake at 375 degrees F for 30 to 35 minutes or until a knife inserted in the center comes out clean.
