southern black-eyed pea cornbread

This recipe comes from my recipe files. Haven't tried this cornbread yet, but since I'm from the South -- it's on my radar to try very soon.

Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup oil
  • 1 medium onion, chopped
  • 2 jalapeno peppers, seeded and chopped
  • 1 cup canned black-eyed peas, drained well
  • 3/4 cup cream style corn
  • 1 pound browned pork breakfast sausage (can use browned ground beef) - drained well
  • 1/2 cup sharp cheddar cheese, grated

How To Make southern black-eyed pea cornbread

  • Step 1
    Mix together cornmeal through jalapeno peppers - mix well.
  • Step 2
    To the cornmeal mixture, add drained blackeye peas, creamed corn, drained meat and cheese.
  • Step 3
    Prepare a 9 x 13 inch baking dish and pour mixture evenly into the dish. Bake at 375 degrees F for 45-60 minutes.
