I took a trip to Ireland November 2011. I picked up this cookbook called A taste of Killarney, compiled by Jane Bergin. This recipe is from Woodlands B&B, Chefs Paud & Julia O'Donoghue.

Ingredients
- 4 cups white flour
- 2 cups brown wholemeal flour
- 1/2 cup bran
- 2 ounces butter
- 1 teaspoon bread soda (baking soda)
- 2 - eggs
- 1/2 cup buttermilk

Step 1Sieve (sift) flours, salt and bread soda (baking soda) and mix lightly. Next cut in the butter.

Step 2Beat eggs and add a little buttermilk (the recipe did not give an amount, I would start with a splash and add more as needed to incorporate the flour, yet not be too loose.)

Step 3Place on a lightly floured board and gently knead into the shape of a loaf.

Step 4Bake 30 minutes, turn, and bake another 15 minutes, or until the loaf sounds hollow. After taking it out of the oven, cover with a clean cloth to keep the crust from getting hard.
