I took a trip to Ireland November 2011. I picked up this cookbook called A taste of Killarney, compiled by Jane Bergin. This recipe is from Woodlands B&B, Chefs Paud & Julia O'Donoghue.

Ingredients

  • 4 cups white flour
  • 2 cups brown wholemeal flour
  • 1/2 cup bran
  • 2 ounces butter
  • 1 teaspoon bread soda (baking soda)
  • 2 - eggs
  • 1/2 cup buttermilk

How To Make soda bread woodlands b&b

  • Step 1
    Sieve (sift) flours, salt and bread soda (baking soda) and mix lightly. Next cut in the butter.
  • Step 2
    Beat eggs and add a little buttermilk (the recipe did not give an amount, I would start with a splash and add more as needed to incorporate the flour, yet not be too loose.)
  • Step 3
    Place on a lightly floured board and gently knead into the shape of a loaf.
  • Step 4
    Bake 30 minutes, turn, and bake another 15 minutes, or until the loaf sounds hollow. After taking it out of the oven, cover with a clean cloth to keep the crust from getting hard.
