Ingredients

  • 250 grams all-purpose flour
  • 100 grams whole wheat flour
  • 125 grams bread flour
  • 100 grams active sourdough starter
  • 350 grams water
  • 8 grams salt
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1 tablespoon sesame seeds
  • 1 tablespoon black sesame seeds
  • TOPPING
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon sunflower seeds
  • 1 tablespoon sesame seeds
  • 1 tablespoon black sesame seeds

How To Make seeded sourdough bread

  • Step 1
    Feed your starter 4 to 12 hours before starting the bread. Combine the water and flour in a large bowl. Let sit for 30 minutes.
  • Step 2
    Add the sourdough starter and salt. Mix well by hand until the dough comes together. Cover and let sit 30 minutes.
  • Step 3
    Stretch and fold 6 times with 15 minutes in between each stretch and fold.
  • Step 4
    On the fourth fold, add the seeds to the dough.
  • Step 5
    Once the stretch and fold is completed, place the dough in an oiled bowl.
  • Step 6
    Cover and let sit and let it sit in a warm place for 6 to 8 hours until it has doubled in size.
  • Step 7
    Prepare a lightly floured surface. Shape the dough into a ball and let sit out uncovered for 20 minutes.
  • Step 8
    Transfer to a banneton basket or tea towel-lined bowl. Cover with plastic wrap and refrigerate for 12 to 15 hours.
  • Step 9
    Place your Dutch oven in a 500 degree for 1 hour. Take the topping seeds and mix them well on a plate.
  • Step 10
    Rub some water on the top of your bread, then sprinkle the seeds on top of the bread.
  • Step 11
    Place a little flour in your Dutch oven. Score the top of the bread with a razor or sharp knife.
  • Step 12
    Place the bread in the Dutch oven. Cover and bake for 20 minutes.
  • Step 13
    Remove the lid and reduce the heat to 475 degrees. Back another 25 minutes. Let it sit for 2 hours before cutting.
