While looking through my trunk of saved recipes, I found this little gem.I only saved the good ones I wanted to bake someday. This one was already was turning a old color.It had been stored at least 40 plus years. It looks like a really nice recipe for us to try. Just in time for CHILI season! I am posting it so it will not get lost again. I do not know where this recipe came from, I just clipped it and saved!... Nancy . 9/17/13

Ingredients
- 3 cups flour
- 4 teaspoons baking powder
- 1-1/2 teaspoon salt
- 5 - scallions........... chopped
- 1 cup walnuts..............chopped
- 4 - carrots, about 2 cups....grated
- 6 tablespoons parsley...........chopped
- 2 medium eggs
- 1-1/2 cup milk
- 1/2 cup corn oil

Step 1Heat oven to 350. Butter a 9" square cake pan. Combine the flour, baking powder, and salt. Chop the scallions and walnuts. Grate the carrots. Add the scallions, walnuts, carrot's and parsley to the flour mixture until just combined. Beat the eggs, milk and oil. Stir this into the flour mixture until just combined..

Step 2Spread into the buttered pan and smooth the top. Bake until a toothpick inserted in the center, comes out clean. About 1-1/4 hours.
