Ingredients

  • 1 - long loaf sour dough or french bread
  • 1 1/2 pounds tomatoes
  • 2 tablespoons olive oil
  • 1 - bunch cilantro, chopped fine
  • 6 - cloves garlic, minced
  • 2 teaspoons red pepper flakes
  • 3/4 cup monterey jack cheese, shredded

How To Make salsa bruschetta

  • Step 1
    Set oven to broil.
  • Step 2
    Slice loaf of bread down the middle and brown slightly under the broiler.
  • Step 3
    In a bowl, mix tomatoes, olive oil, cilantro, garlic, red pepper and cheese.
  • Step 4
    Cover cut side of bread with tomato mixture.
  • Step 5
    Place under broiler until the whole thing begins to brown and the cheese begins to melt - about 2 minutes.
  • Step 6
    Remove and slice into serving size pieces.
