Ingredients

  • 1
    long loaf sour dough or french bread
  • 1 1/2 lb
    tomatoes
  • 2 Tbsp
    olive oil
  • 1
    bunch cilantro, chopped fine
  • 6
    cloves garlic, minced
  • 2 tsp
    red pepper flakes
  • 3/4 c
    monterey jack cheese, shredded

How to Make Salsa Bruschetta

Step-by-Step

  1. Set oven to broil.
  2. Slice loaf of bread down the middle and brown slightly under the broiler.
  3. In a bowl, mix tomatoes, olive oil, cilantro, garlic, red pepper and cheese.
  4. Cover cut side of bread with tomato mixture.
  5. Place under broiler until the whole thing begins to brown and the cheese begins to melt - about 2 minutes.
  6. Remove and slice into serving size pieces.
