  • 3 c
    all purpose flour
  • 3 Tbsp
    parmesan cheese,grated or shredded
  • 1 tsp
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 2
  • 1 c
  • 1/3 c
  • 1/3 c
    melted margerine
  • 1 c
    shredded zucchini
  • 1 Tbsp
    finely chopped onion (i like to add a bit more, up to 3 tbsp.

How to Make Parmesan Zucchini Loaf


  1. Combine first 5 ingredients.
  2. Beat eggs,buttermilk,sugar and melted margerine. Stir into dry ingredients just until mixed.
  3. Fold in zucchini and onion.
  4. Pour into sprayed and floured loaf pan and bake at 350 degrees for 1 hour. Cool 10 minutes and remove from pan to rack to cool.
