Ingredients
- 3 cups all purpose flour
- 3 tablespoons parmesan cheese,grated or shredded
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 - eggs
- 1 cup buttermilk
- 1/3 cup sugar
- 1/3 cup melted margerine
- 1 cup shredded zucchini
- 1 tablespoon finely chopped onion (i like to add a bit more, up to 3 tbsp.
How To Make parmesan zucchini loaf

Step 1Combine first 5 ingredients.

Step 2Beat eggs,buttermilk,sugar and melted margerine. Stir into dry ingredients just until mixed.

Step 3Fold in zucchini and onion.

Step 4Pour into sprayed and floured loaf pan and bake at 350 degrees for 1 hour. Cool 10 minutes and remove from pan to rack to cool.
