Ingredients

3 c
all purpose flour
3 Tbsp
parmesan cheese,grated or shredded
1 tsp
salt
1/2 tsp
baking powder
1/2 tsp
baking soda
2
eggs
1 c
buttermilk
1/3 c
sugar
1/3 c
melted margerine
1 c
shredded zucchini
1 Tbsp
finely chopped onion (i like to add a bit more, up to 3 tbsp.

How to Make Parmesan Zucchini Loaf

Step-by-Step

  • 1Combine first 5 ingredients.
  • 2Beat eggs,buttermilk,sugar and melted margerine. Stir into dry ingredients just until mixed.
  • 3Fold in zucchini and onion.
  • 4Pour into sprayed and floured loaf pan and bake at 350 degrees for 1 hour. Cool 10 minutes and remove from pan to rack to cool.
