Something different from the usual sweet zucchini breads.

Ingredients

  • 3 cups all purpose flour
  • 3 tablespoons parmesan cheese,grated or shredded
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 - eggs
  • 1 cup buttermilk
  • 1/3 cup sugar
  • 1/3 cup melted margerine
  • 1 cup shredded zucchini
  • 1 tablespoon finely chopped onion (i like to add a bit more, up to 3 tbsp.

How To Make parmesan zucchini loaf

  • Step 1
    Combine first 5 ingredients.
  • Step 2
    Beat eggs,buttermilk,sugar and melted margerine. Stir into dry ingredients just until mixed.
  • Step 3
    Fold in zucchini and onion.
  • Step 4
    Pour into sprayed and floured loaf pan and bake at 350 degrees for 1 hour. Cool 10 minutes and remove from pan to rack to cool.
