Ingredients
- 1 cup chopped olives, drained. save the brine.
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 2 tablespoons fresh chopped basil
- 1 teaspoon salt
- 3 large eggs
- 1/3 cup greek yogurt (plain)
- 1/3 cup brine from green olives
- 2 1/2 tablespoons olive oil
How To Make olive loaf quick bread

Step 1Preheat oven to 340 degrees. Grease and flour a 9-in loaf pan or line with parchment.

Step 2In a large bowl mix together flour, baking soda, baking powder, basil, olives and salt.

Step 3In a medium bowl, mix together eggs, yogurt, olive brine and olive oil.

Step 4Stir egg mixture into the dry ingredients. Batter should be thick. (Not runny like cake batter, but not as thick as pizza dough.)

Step 5Spoon into prepared pan and bake 40 minutes or until a toothpick comes out clean.

Step 6Turn out onto rack to cool.
