oatmeal walnut bread

This bread is DELISH!!! So good I can eat it plain! But toast it and spread with cream cheese or butter and its amazing! It calls for walnuts, but I think toasted pecans would be wonderful in this!!! (and craisins too)

Ingredients

  • 2 cups boiling water
  • 1 cup uncooked oatmeal
  • 1/2-3/4 cup brown sugar
  • 2 teaspoons sea salt
  • 2 tablespoons butter or shortening
  • 2 packages yeast or 1 1/2 tablespoons
  • 4-5 cups bread flour or ap flour
  • 1 cup walnuts or pecans, chopped (i like them toasted)

How To Make oatmeal walnut bread

  • Step 1
    Pour boiling water over uncooked oatmeal in mixing bowl, stir to mix, then stir in brown sugar and salt. Let stand until lukewarm (115ish degrees) Then add shortening and yeast. Let this mixture set until bubbly, 10-15 min. Knead in 4 c flour and walnuts, kneading until well mixed, adding more flour as needed 1/4 c at a time, until nice ball of dough has formed. Turn dough into a greased/sprayed large bowl, turn dough over to coat both sides, cover with plastic wrap, allow to rise in warm place until doubled in size.
  • Step 2
    Shape into 2 loaves, place in greased/sprayed loaf pans (8x4 size) cover with plastic wrap and allow to rise until doubled in size again. Bake at 350 for 35-45 minutes or until internal temp reaches 170ish (use a meat or digital thermometer)
  • Step 3
    Remove from oven to cooling racks, allow to cool 10 min in pans, then remove from pans to cool completely. Enjoy!!!
