My mother, whom my son called Nanny, was a wonderful cook. Here is one of her recipes for a corn puddin'.

Ingredients
- 1 stick butter
- 1 can creamed corn
- 1 can whole kernel corn
- 1 - medium onion, finely chopped
- 1 box jalapeno cornbread mix, dry (i use jiffy)
- - red pepper to taste (optional)
How To Make nanny's corn puddin'

Step 1Pre-heat oven to 325 degrees. Melt half of the butter in a 9x13 pan. Mix all other ingredients (do not drain cans of corn-use juices) and pour into pan. Melt remainder of butter and pour on top. Bake one hour.
