This is a sort-of cornbread recipe. It isn't exactly cornbread but it is exactly good! It is good with meats and beans, too.

Ingredients

  • 1 can(s)
    creamed corn
  • 1 c
    bisquick
  • 1/2 c
    milk
  • 1
    egg, beaten
  • 2 Tbsp
    oil
  • 1 can(s)
    whole green chiles, drained and seeds rinsed off
  • 6 oz
    monterey jack or pepper jack cheese, grated

How to Make Mimi's Green Chile Corn Casserole Bread

Step-by-Step

  1. Heat oven to 350. Grease an 8 x 8 inch pan. I usually put butter in the pan and then put it in the oven to melt while I mix the ingredients.
  2. Combine first 5 ingredients. Spread 1/2 of batter in pan. Cover with green chiles and then grated cheese. Top with the rest of the batter.
  3. Bake at 350 degrees for 30-40 minutes or until golden brown. Does not get as dry as a cornbread does, should still be soft and very moist.
