I got this recipe from my daughter's grandmother. I don't serve it as often as I should, but it's a great companion to a bowl of chili.

Ingredients
- 1 cup yellow corn meal
- 1 cup all purpose flour
- 2 tablespoons sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 1/4 cup vegetable oil
- 1 small jalapeno pepper, seeded and diced
- 1/4 cup shredded cheddar cheese
- 1 can cream style corn
- 1 tablespoon bacon grease
How To Make mexican cornbread

Step 1Preheat oven to 425 degrees.

Step 2Combine cornmeal,flour,sugar,baking powder, and salt in a large mixing bowl.

Step 3Add milk, egg, and oil. Beat until mostly smooth.

Step 4Fold in pepper,cheese, bacon grease and corn.

Step 5Bake in a greased cast iron skillet until a toothpick inserted in the center comes out clean (approximately 25 minutes)
