I got this recipe from my daughter's grandmother. I don't serve it as often as I should, but it's a great companion to a bowl of chili.

yellow corn meal
1 c
all purpose flour
2 Tbsp
4 tsp
baking powder
1/2 tsp
1 c
1 large
1/4 c
vegetable oil
1 small
jalapeno pepper, seeded and diced
1/4 c
shredded cheddar cheese
1 can(s)
cream style corn
1 Tbsp
bacon grease

How to Make Mexican Cornbread


  • 1Preheat oven to 425 degrees.
  • 2Combine cornmeal,flour,sugar,baking powder, and salt in a large mixing bowl.
  • 3Add milk, egg, and oil. Beat until mostly smooth.
  • 4Fold in pepper,cheese, bacon grease and corn.
  • 5Bake in a greased cast iron skillet until a toothpick inserted in the center comes out clean (approximately 25 minutes)
