I can not claim this recipe... it is my husbands. He taught me how to make it. I will get a picture later this week.

Ingredients

  • 2 packages jffy cornbread
  • 1 1/2 pounds ground beef
  • 1 medium chopped onion
  • 1 medium chopped bell pepper
  • 1 pound velveta cheese cubed
  • 1 - can creamed corn
  • 1 - jalapeno pepper chopped
  • 1 teaspoon oregano, dried
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder

How To Make * mexican cornbread

  • Step 1
    cook meat spices, onion and peppers together until meat is brown. drain meat well.
  • Step 2
    In a bowl put 2 pkg of cornbread and creamed corn.
  • Step 3
    Pour 1/2 the batter in a cake pan. Top with meat then top the meat with small cubes of the velveta. The more cheese the better :)
  • Step 4
    Cover the dish with the remaining batter.
  • Step 5
    cook uncovered in the oven at 375 degrees for 40 minutes or until the bread is slightly browned on top.
