  • 2 pkg
    jffy cornbread
  • 1 1/2 lb
    ground beef
  • 1 medium
    chopped onion
  • 1 medium
    chopped bell pepper
  • 1 lb
    velveta cheese cubed
  • 1
    can creamed corn
  • 1
    jalapeno pepper chopped
  • 1 tsp
    oregano, dried
  • 1 tsp
    garlic powder
  • 1 tsp
    chili powder

How to Make * Mexican Cornbread


  1. cook meat spices, onion and peppers together until meat is brown. drain meat well.
  2. In a bowl put 2 pkg of cornbread and creamed corn.
  3. Pour 1/2 the batter in a cake pan. Top with meat then top the meat with small cubes of the velveta. The more cheese the better :)
  4. Cover the dish with the remaining batter.
  5. cook uncovered in the oven at 375 degrees for 40 minutes or until the bread is slightly browned on top.
