Every time I make this I have to make a double batch. I make mine in Heart shape pans and heart shape muffins pans and everyone that gets it tell their friends that MeMe loves them because they got heart shaped Cornbread. That is what all the adults got for Valentines Day.

Ingredients

  • 8 oz
    cream cheese, room temperature
  • 1 can(s)
    cream style corn
  • 2 large
    eggs
  • 1/2 c
    cooking oil
  • 1 1/2 large
    chopped onion
  • 6 oz
    diced jalapeno peppers
  • 2 c
    buttermilk cornmeal mix

How to Make MeMe's Famous Mexican Cornbread

Step-by-Step

  1. soften cream cheese, mix well with cream corn, add eggs and oil mix well,add onion and peppers mix well.when all ingredients are mixed well add cornmeal mix, mix until well moistened. pour into well greased pan or muffin tins. cook 30 to 35 minutes in 450 degree oven or untill browned.
