- 1 cup yellow cornmeal
- 1 cup flour
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 4 tablespoons melted shortening
- 1 cup cream style corn
- 1 cup grated cheddar cheese
- 1 can diced green chili peppers
- 1 jar 4-oz sliced pimientos
- 2 large eggs

Step 1Preheat oven to 375 degrees. Combine buttermilk and cornmeal and let stand for 30 minutes. Add remaining ingredients to cornmeal and buttermilk mixture. Mix well. Pour into 9x13 greased pan. Bake 30 minutes.
