This is an easy recipe that everyone loves. The cornbread is flavorful, and the jalapenos add only a hint of warmth and spice. You can also substitute 10 ounces of chopped broccoli for the jalapenos for a delicious broccoli cornbread.

Ingredients
- 2 boxes jiffy cornbread mix (small)
- 2 eggs
- 1 stick margarine
- 12 ounces small curd cottage cheese
- 1 cup grated cheddar cheese
- 1 can chopped jalapenos (small)
How To Make jalapeno cornbread

Step 1Melt stick of margarine in 9 x 13 pan in 350 degree oven.

Step 2In large bowl, combine cornbread mix, eggs, and cottage cheese.

Step 3Stir in cheese and jalapenos.

Step 4Pour 1/4 of melted margarine into cornbread mixture, and stir until blended well.

Step 5Pour cornbread mixture over the melted butter, and smooth mixture to all corners of the pan.

Step 6Bake at 350 degrees for 20 - 25 minutes or until golden brown.
