Ingredients

  • - pesto for spread
  • 2 cups fresh basil
  • 2 cups fresh arugula leaves
  • 1/4 cup fresh flat-leaf parsley leaves
  • 3/4 cup walnuts
  • 4 tablespoons olive oil
  • 4 cloves garlic cloves, peeled
  • 3/4 cup parmigiano-reggiano cheesefresh grated

How To Make grilled pesto, avocado, bacon tomato sandwich

  • Step 1
    Put first 6 ingredients in a food processor. Pulse 7-8 times until chunky/smooth, add cheese and pulse a couple more times.
  • Step 2
    (If it seems a bit dry for spreading, add a bit more oil) (Any leftovers can be stored in refrigerator, or it is yummy stirred into cooked pasta)
  • Step 3
    Fry 6 slices of bacon and drain Slice one avocado Slice one tomato Spread 4 slices sour dough bread or nutty whole wheat bread with butter
  • Step 4
    Spread opposite sides of bread with pesto, place sliced avocado over pesto on 2, and top with 3 pieces of bacon and tomato slices, and top with other 2 pieces of bread. Grill on both sides until golden browned...ENJOY!!
