How to Make Gluten-free orange chocolate chip bread
- Place orange peel in a small bowl. Add the 3/4 cup boiling water to it. let stand for ten minutes.
- Meanwhile, in a large bowl, combine the flour, sugar, baking powder, salt and baking soda. In another bowl, whisk the egg, butter, vanilla and reserved orange mixture. Add the orange juice. Stir into dry ingredients just until moistened. Fold in chocolate chips.
- Pour into a greased 8-in. x 4-in. loaf pan. Bake at 350° for 55-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf (12 servings).
