Ingredients

  • 330 grams plain flour
  • 45 grams caster sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 85 grams butter, very cold and cubed
  • 1 cup buttermilk, cold
  • 1 egg (for brushing)

How To Make fluffy buttermilk scones

  • Step 1
    In a large bowl, mix together flour, sugar, baking powder, baking soda and salt. Rub cubed butter into the dry ingredients by hand and mix until till they resemble course bread crumbs. Some pieces of butter should still be quite big, about pea-sized. Add the buttermilk in two parts, folding until no liquid remains isolated in the bowl but the dough has not fully come together yet.
  • Step 2
    Line a piece of baking sheet on the kitchen bench and place dough on top and knead until it comes together, be careful not to overwork it. Pat into a 2.5 cm (1 inch) thick disc and freeze for 1 hour. Preheat oven to 220 degree Celsius (425 F).
  • Step 3
    Line a piece of baking sheet on the kitchen bench and place dough on top. Dust a 7.5 cm (2.5 inch) scone/cookie cutter with flour and cut the dough in one go, fastly. Dust the cutter before cutting into the dough again. Lightly knead together remaining scraps and pat into 2.5 cm (1 inch) thick disc to make your last scone/s. Space scones apart on a lined baking tray, side by side to one another. Lightly brush scone tops with beaten egg, avoiding the sides. Bake for 15 mins or until skewer inserted into the centre comes out clean.
