Ingredients

  • STARTER
  • 1/3 cup water
  • 1/2 teaspoon active dry yeast
  • 2/3 cup all-purpose flour
  • BREAD
  • 1 1/3 cups warm water
  • 1 teaspoon active dry yeast
  • 1 teaspoon granulated sugar
  • 3 1/4 cups all-purpose flour
  • 1/3 cup olive oil
  • 1 tablespoon salt
  • grated Parmesan cheese (optional)

How To Make filone

  • Step 1
    Mix 1/3 cup warm water with 1/2 tsp yeast. Let it rest for 10 minutes. Add the 2/3 cups of flour and mix well. This is the starter. Let it sit at room temperature for 1 hour. Then place in the fridge for 24 hours.
  • Step 2
    Remove the starter from the fridge. Let it come to room temperature about 30 minutes.
  • Step 3
    Add to the starter, 1 1/3 cups of warm water and 1 tsp yeast. Add in the remaining flour, oil, and salt. Mix until flour is incorporated. Then let it sit 20 minutes.
  • Step 4
    Knead for 10 minutes using extra flour, or knead with a standing mixer for 10 minutes.
  • Step 5
    Transfer to a bowl with olive oil and cover with plastic wrap. Let rise for 2 hours.
  • Step 6
    Divide into 2 loaves and place in cast iron baking pan drizzled with olive oil. Let it rise for another hour.
  • Step 7
    Brush the top with olive oil.
  • Step 8
    Place in a preheated 425-degree oven and bake for 40 minutes.
  • Step 9
    Sprinkle with Parmesan cheese if using.
