Ingredients
- STARTER
- 1/3 cup water
- 1/2 teaspoon active dry yeast
- 2/3 cup all-purpose flour
- BREAD
- 1 1/3 cups warm water
- 1 teaspoon active dry yeast
- 1 teaspoon granulated sugar
- 3 1/4 cups all-purpose flour
- 1/3 cup olive oil
- 1 tablespoon salt
- grated Parmesan cheese (optional)
How To Make filone

Step 1Mix 1/3 cup warm water with 1/2 tsp yeast. Let it rest for 10 minutes. Add the 2/3 cups of flour and mix well. This is the starter. Let it sit at room temperature for 1 hour. Then place in the fridge for 24 hours.

Step 2Remove the starter from the fridge. Let it come to room temperature about 30 minutes.

Step 3Add to the starter, 1 1/3 cups of warm water and 1 tsp yeast. Add in the remaining flour, oil, and salt. Mix until flour is incorporated. Then let it sit 20 minutes.

Step 4Knead for 10 minutes using extra flour, or knead with a standing mixer for 10 minutes.

Step 5Transfer to a bowl with olive oil and cover with plastic wrap. Let rise for 2 hours.

Step 6Divide into 2 loaves and place in cast iron baking pan drizzled with olive oil. Let it rise for another hour.

Step 7Brush the top with olive oil.

Step 8Place in a preheated 425-degree oven and bake for 40 minutes.

Step 9Sprinkle with Parmesan cheese if using.
