Kicked up a notch easy peasy cornbread, almost Mexican but no peppers. If you want a little heat use pepper jack cheese.

Ingredients

1 c
vegetable oil
4
eggs
2 c
self-rising cornmeal
2
sm cans of creamed corn
2 c
sour cream
1 c
cheddar cheese, shredded

How to Make Easy cornbread

Step-by-Step

  • 1Preheat oven to 350 degrees. I put my 10" seasoned cast iron skillet in the oven to heat up at this time.
  • 2In a large measuring cup, measure out the oil and add the 4 eggs and beat till eggs are broken and you do not have to make an emulsion. Set aside.
  • 3In medium mixing bowl put cornmeal and add the oil mixture, mix until blended then add the remaining ingredients. Pour into your heated skillet and bake for 30 minutes.
