easy cornbread

Kicked up a notch easy peasy cornbread, almost Mexican but no peppers. If you want a little heat use pepper jack cheese. Hope you enjoy!

Ingredients
- 1 cup vegetable oil
- 4 - eggs
- 2 cups self-rising cornmeal
- 2 - sm cans of creamed corn
- 2 cups sour cream
- 1 cup cheddar cheese, shredded
How To Make easy cornbread

Step 1Preheat oven to 350 degrees. I put my 10" seasoned cast iron skillet in the oven to heat up at this time.

Step 2In a large measuring cup, measure out the oil and add the 4 eggs and beat till eggs are broken and you do not have to make an emulsion. Set aside.

Step 3In medium mixing bowl put cornmeal and add the oil mixture, mix until blended then add the remaining ingredients. Pour into your heated skillet and bake for 30 minutes.
