Kicked up a notch easy peasy cornbread, almost Mexican but no peppers. If you want a little heat use pepper jack cheese. Hope you enjoy!

Ingredients

  • 1 cup vegetable oil
  • 4 - eggs
  • 2 cups self-rising cornmeal
  • 2 - sm cans of creamed corn
  • 2 cups sour cream
  • 1 cup cheddar cheese, shredded

How To Make easy cornbread

  • Step 1
    Preheat oven to 350 degrees. I put my 10" seasoned cast iron skillet in the oven to heat up at this time.
  • Step 2
    In a large measuring cup, measure out the oil and add the 4 eggs and beat till eggs are broken and you do not have to make an emulsion. Set aside.
  • Step 3
    In medium mixing bowl put cornmeal and add the oil mixture, mix until blended then add the remaining ingredients. Pour into your heated skillet and bake for 30 minutes.
