My Grandmother always made some kind of homemade bread for dinner,usually it was yeast rolls. This is another bread she made often.

1 pkg yeast
1/4 c warm water
1 c milk,scalded
1/2 c shortening
1/4 c sugar
2 1/2 c flour
1 t. salt
1 c rolled oats(quick cooking or old fashion)
2 eggs,1 of them separated


egg white,slightly beaten
1/4 c rolled oats
1/4 t. salt


1Soften yeast in warm water.
To milk,add shortening,sugar and salt.Cool to lukewarm.
Stir in oats,1 whole egg,egg yolk and softened yeast.
Stir in flour. Beat well. Cover. Let rise in warm place till doubles in size. Stir down.
Fill greased muffin cups half full.Cover. Let rise in warm place till double in bulk, about 30 minutes. Brush tops lightly with egg white. Combine oats and salt.Sprinkle on top of muffins.
Bake at 375 degrees 15-20 minutes.
