I have tried so many yeast rolls through the years, and this is by far my favorite. It's hard not to overeat as they come out of the oven.

Don't tell anyone that there is cottage cheese in these yeast rolls because you can't tell. They are super fluffy, light, and airy. When biting into them, they're slightly chewy. So, a slightly different texture than a traditional roll. A great dinner roll for serving a crowd because the recipe makes 30 rolls. Enjoy as a side with a main meal, but we think they'd be great with sliders too.

Ingredients

  • 4 1/2 teaspoons active dry yeast
  • 1/2 cup warm water (115 degrees)
  • 2 cups cottage cheese, small curd
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 2 teaspoons salt
  • 1/2 teaspoon baking soda
  • 4 1/2 cups all-purpose flour
