cottage cheese yeast rolls
I have tried so many yeast rolls through the years, and this is by far my favorite. It's hard not to overeat as they come out of the oven.

Don't tell anyone that there is cottage cheese in these yeast rolls because you can't tell. They are super fluffy, light, and airy. When biting into them, they're slightly chewy. So, a slightly different texture than a traditional roll. A great dinner roll for serving a crowd because the recipe makes 30 rolls. Enjoy as a side with a main meal, but we think they'd be great with sliders too.

Ingredients
- 4 1/2 teaspoons active dry yeast
- 1/2 cup warm water (115 degrees)
- 2 cups cottage cheese, small curd
- 2 large eggs
- 1/4 cup granulated sugar
- 2 teaspoons salt
- 1/2 teaspoon baking soda
- 4 1/2 cups all-purpose flour
How To Make cottage cheese yeast rolls

Step 1Dissolve yeast in warm water and let sit.

Step 2Heat the cottage cheese until it reaches 115 degrees.

Step 3Combine the yeast mixture, cottage cheese, eggs, sugar, salt, baking soda, and 2 cups of flour. Beat until smooth.

Step 4Add the rest of the flour a little at a time.

Step 5Mix until it forms a slightly sticky ball. Knead 6 - 8 minutes.

Step 6Form a ball and place it in a greased bowl. Turn once to grease the top. Cover and let rise for an hour or until doubled in size in a warm place.

Step 7Punch dough down and divide into 30 balls.

Step 8Place about 2 inches apart on a greased baking sheet. Cover and let rise about 30 minutes until doubled in size.

Step 9Preheat the oven to 350 degrees F. Bake for 10 to 12 minutes or until lightly browned.

Step 10Let cool on a rack. Makes 2 1/2 dozen.
