cornbread with a kick!
Cornbread is the perfect accommpaniament to a bowl of chili or soup. This recipe has a bit of 'kick' to it due to adding jalapeno peppers, and some chili oil. I threw a chili cook-off at my house, and this recipe was a big hit.

Ingredients
- 1 cup yellow cornmeal
- 1 cup all purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup buttermilk
- 1/3 cup vegetable oil
- 1 - egg
- 1 can jalapeno peppers, diced
- 1 can whole kernel corn, drained
- 1/2 cup red bell pepper, chopped
- 1 tablespoon chili oil
How To Make cornbread with a kick!

Step 1Preheat oven to 400 degrees. Grease a 9x13 baking dish.

Step 2In a frying pan, over medium-low heat, sauté the bell pepper in a chili infused oil for about 10 minutes; set aside.

Step 3In a large bowl, combine all other ingredients and blend well; add the sauted peppers.

Step 4Pour mixture into prepared baking dish.

Step 5Bake for 20-25 minutes, or until a toothpick poked into the center comes out clean.
