Cornbread with a Kick!

Cornbread is the perfect accommpaniament to a bowl of chili or soup. This recipe has a bit of 'kick' to it due to adding jalapeno peppers, and some chili oil.
I threw a chili cook-off at my house, and this recipe was a big hit.

  • 1 c
    yellow cornmeal
  • 1 c
    all purpose flour
  • 1/4 c
  • 1 Tbsp
    baking powder
  • 1 tsp
  • 1 c
  • 1/3 c
    vegetable oil
  • 1
  • 1 can(s)
    jalapeno peppers, diced
  • 1 can(s)
    whole kernel corn, drained
  • 1/2 c
    red bell pepper, chopped
  • 1 Tbsp
    chili oil

How to Make Cornbread with a Kick!


  1. Preheat oven to 400 degrees. Grease a 9x13 baking dish.
  2. In a frying pan, over medium-low heat, sauté the bell pepper in a chili infused oil for about 10 minutes; set aside.
  3. In a large bowl, combine all other ingredients and blend well; add the sauted peppers.
  4. Pour mixture into prepared baking dish.
  5. Bake for 20-25 minutes, or until a toothpick poked into the center comes out clean.
