cornbread with a kick!

Cornbread is the perfect accommpaniament to a bowl of chili or soup. This recipe has a bit of 'kick' to it due to adding jalapeno peppers, and some chili oil. I threw a chili cook-off at my house, and this recipe was a big hit.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 - egg
  • 1 can jalapeno peppers, diced
  • 1 can whole kernel corn, drained
  • 1/2 cup red bell pepper, chopped
  • 1 tablespoon chili oil

How To Make cornbread with a kick!

  • Step 1
    Preheat oven to 400 degrees. Grease a 9x13 baking dish.
  • Step 2
    In a frying pan, over medium-low heat, sauté the bell pepper in a chili infused oil for about 10 minutes; set aside.
  • Step 3
    In a large bowl, combine all other ingredients and blend well; add the sauted peppers.
  • Step 4
    Pour mixture into prepared baking dish.
  • Step 5
    Bake for 20-25 minutes, or until a toothpick poked into the center comes out clean.
