Ingredients
- 1 package - jiffy cornbread mix
- 1 - egg
- 1/3 cup - water
- 1 package - green giant steamers frozen corn
- as needed - olive oil, extra virgin
How To Make cornbread cakes

Step 1mix egg, water and jiffy cornbread mix according to box

Step 2Place steamer of corn in microwave for 4 minutes

Step 3add corn to cornbread mix (you may want to cool corn in refrigerator for a few minutes first) and stir

Step 4Heat a griddle (350-400) or iron skillet and add a couple tablespoons of olive oil to surface or spray surface.

Step 5Pour mixture onto the surface like a pancake and let it brown on each side and serve
