How to Make Cornbread cakes
- mix egg, water and jiffy cornbread mix according to box
- Place steamer of corn in microwave for 4 minutes
- add corn to cornbread mix (you may want to cool corn in refrigerator for a few minutes first) and stir
- Heat a griddle (350-400) or iron skillet and add a couple tablespoons of olive oil to surface or spray surface.
- Pour mixture onto the surface like a pancake and let it brown on each side and serve
