I didn't have yellow cornmeal so decided to use what I had... white cornmeal and yellow corn grits. It made a very tasty, moist & slightly crumbly cornbread. This is how I will make it from now on! My husband liked it so well he ate 3 pieces!

Ingredients

  • 1 cup flour
  • 1/2 cup white corn meal
  • 1/4 cup yellow corn grits
  • 1/4 cup granulated sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 - egg, beaten
  • 2 tablespoons melted butter, butter substitute, or bacon fat

How To Make cornbread

  • Step 1
    Mix together dry ingredients until well blended
  • Step 2
    Add beaten egg, melted butter & milk. Stir just until all ingredients moist. Do not overmix.
  • Step 3
    Pour into an 8x8" or 9x9" glass baking pan.
  • Step 4
    Bake in a pre-heated 425 degree oven for 20 minutes.
  • Step 5
    Cut into 9 squares and serve with butter and honey or sorghum.
