This is a great alternative to corn bread - it takes great! Not as "crumbly", as corn bread. Great for the fall with stew! You can also use flavored corn meal or put these in a muffin tin. Enjoy!

Ingredients

  • 2 cups plain corn meal
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1 - egg
  • 2 cups buttermilk
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/3 cup oil

How To Make corn light bread

  • Step 1
    Mix dry ingredients. Add buttermilk and egg, then oil last. Bake in a greased loaf pan at 350 for 45 to 50 minutes or until done. Enjoy!
