This is a great alternative to corn bread - it takes great! Not as "crumbly", as corn bread.

Great for the fall with stew! You can also use flavored corn meal or put these in a muffin tin.

How to Make Corn Light Bread

Step-by-Step

  1. Mix dry ingredients. Add buttermilk and egg, then oil last. Bake in a greased loaf pan at 350 for 45 to 50 minutes or until done. Enjoy!
