A slightly different variation to regular cornbread.

Ingredients

  • 2 boxes jiffy corn muffin mix
  • 3 or 4 slices bacon, cooked and crumbled
  • 2 large eggs
  • 1 can cream style corn
  • - mozzarella, asiago or queso cheese, your choice (i use hot white american)

How To Make cheesey cornbread

  • Step 1
    Follow the directions for preparation on the box of muffin mix, but instead of using the milk it calls for, substitute cream style corn (2/3 cup) and add the bacon bits. Mix well. Pour half the batter into a casserole dish. Place a layer of cheese over the batter. Pour remaining batter on top of the cheese. Cook according to directions on the muffin mix box.
