- 2 boxes jiffy corn muffin mix
- 3 or 4 slices bacon, cooked and crumbled
- 2 large eggs
- 1 can cream style corn
- - mozzarella, asiago or queso cheese, your choice (i use hot white american)
How To Make cheesey cornbread

Step 1Follow the directions for preparation on the box of muffin mix, but instead of using the milk it calls for, substitute cream style corn (2/3 cup) and add the bacon bits. Mix well. Pour half the batter into a casserole dish. Place a layer of cheese over the batter. Pour remaining batter on top of the cheese. Cook according to directions on the muffin mix box.
