Ingredients
- 2 - eggs, at room temperature and lightly beaten
- 1 1/3 cups sugar
- 2 teaspoons vanilla
- 3 cups fresh grated zucchini (before grating the zucchini should be at room temperature)
- 2.3 cups melted butter
- 2 teaspoons baking soda
- Pinch - salt
- 3 cups a/p flour
- 1/2 teaspoon nutmeg
- 2 teaspoons cinnamon
How To Make champion zucchini bread

Step 1Preheat oven to 350 degrees. Spray one 5 X 9 loaf pan with PAM and set aside.

Step 2In a large bowl, mix together sugar, eggs, and vanilla. Fold in the grated zucchini and then the melted butter.

Step 3Sprinkle the baking soda and salt over the mixture and stir in. Add the flour, a third at a time, stirring after each addition. Sprinkle the cinnamon and nutmeg over the batter and stir in.

Step 4Pour the batter into the loaf pan. Bake for 55 minutes (check for doneness at 50 minutes) or bake until a wooden toothpick inserted in the center comes out clean. Cool in pan for 10 minutes. Turn out on a wire rack to cool completely.
