eggs, at room temperature and lightly beaten
1 1/3 c
sugar
2 tsp
vanilla
3 c
fresh grated zucchini (before grating the zucchini should be at room temperature)
2.3 c
melted butter
2 tsp
baking soda
Pinch
salt
3 c
a/p flour
1/2 tsp
nutmeg
2 tsp
cinnamon

How to Make Champion Zucchini Bread

Step-by-Step

  • 1Preheat oven to 350 degrees. Spray one 5 X 9 loaf pan with PAM and set aside.
  • 2In a large bowl, mix together sugar, eggs, and vanilla. Fold in the grated zucchini and then the melted butter.
  • 3Sprinkle the baking soda and salt over the mixture and stir in. Add the flour, a third at a time, stirring after each addition. Sprinkle the cinnamon and nutmeg over the batter and stir in.
  • 4Pour the batter into the loaf pan. Bake for 55 minutes (check for doneness at 50 minutes) or bake until a wooden toothpick inserted in the center comes out clean. Cool in pan for 10 minutes. Turn out on a wire rack to cool completely.
