bacon-flavored corn sticks

I inherited a corn stick iron pan from my great grandmother. This is one way I use it. The bacon grease helps keep it seasoned. The prep time assumes you have bacon drippings saved. (A must in the Southern kitchen.) If not, you will need to make some. Enjoy the bacon! :)

Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup boiling water
- 1/4 cup melted bacon drippings, plus 2 Tbsp more for pan
- 2 large eggs, beaten
How To Make bacon-flavored corn sticks

Step 1Combine the first 4 ingredients in a large bowl; stir well.

Step 2Combine the milk, boiling water, 1/4 cups melted drippings, and eggs. Add to the dry ingredients, stirring just until moistened.

Step 3Brush 2 cast-iron corn stick pans with remaining 2 tablespoons drippings. Place the pans in a 425 degree F oven for 3 minutes or until very hot.

Step 4Remove from the oven and spoon the batter evenly into the pans, filling 3/4 full. Bake for 18 to 20 minutes or until lightly browned. Remove the corn sticks from the pans immediately. Serve warm.
