easy cloverleaf rolls or crescents

I got this recipe many years ago. My sister-in-law always request that I make these for our family holiday dinners. Make sure that your yeast is fresh. This dough is excellent for making homemade cinnamon rolls.

Ingredients

  • 2 cups lukewarm water 110-115 degrees
  • 2 packages rapid rise active dry yeast ( red star)
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 1 large egg, beaten
  • 1/2 cup wesson oil
  • 7 cups all purpose flour
  • 3 tablespoons solid shortening (crisco) enough to grease bowl and muffin tins
  • NOTE: TO MAKE DOUGH A DAY AHEAD USE REGULAR RISE YEAST.DO NOT USE RAPID RISE YEAST. AND LET DOUGH RISE OVERNIGHT, IN REFRIGERATOR

How To Make easy cloverleaf rolls or crescents

  • Step 1
    Put sugar, salt and lukewarm (not hot) water into a Large Mixing Bowl; sprinkle in yeast.
  • Step 2
    Add beaten egg and half of the flour. Beat well, with mixer or by hand.
  • Step 3
    Add oil and remaining flour. Stir well. Remove dough from bowl. Knead lightly for about 6-10 minutes on lightly floured surface until smooth and elastic. Lightly add flour to surface and hands as needed.
  • Step 4
    Then grease the sides and bottom of the (same) mixing bowl with solid shortening and place kneaded dough back into the bowl. Turning dough once to coat the top. Cover with cloth and place in an area free from drafts to let rise until double in size-about 2 hours.
  • Step 5
    Punch down dough. Pinch off enough dough to form 1/2 to 1-inch sized balls. Place 2-3 balls of dough into greased muffin tins. Cover & let rise about 3 hours until doubled.
  • Step 6
    Bake at 400 degrees approximately 15 minutes until golden brown. Butter tops of rolls while still warm.
