Damper is a traditional Australian soda bread, historically prepared by swagmen, drovers, stockmen and other travellers. It was traditionally baked in the coals of a campfire or in a camp oven. This is one version to make at home!

Ingredients

  • 4 cups self-rising flour
  • 1 teaspoon salt
  • 1 tablespoon butter, softened
  • 1 cup milk, whole or reduced fat
  • 1/2 cup water

How To Make damper

  • Step 1
    (If you aren't using self-rising flour, add 1 1/2 teaspoons baking powder and 1/4 to 1/2 teaspoon salt for every cup of regular flour)
  • Step 2
    Preheat oven to 425ºF. Lightly grease a baking sheet.
  • Step 3
    Stir flour and salt together. Cut in butter until dough is crumbly.
  • Step 4
    Make a well in the center of flour mixture and pour in milk and water. Stir until liquid is absorbed and dough holds together.
  • Step 5
    Turn the dough out onto a lightly floured surface. Knead once or twice and form into a round loaf 7-8 inches across. Place the loaf onto the prepared pan and using a sharp knife, cut a cross in the top.
  • Step 6
    Bake for 25 minutes at 425ºF then lower oven temp to 350ºF and bake for an additional 5-10 minutes until loaf is golden brown. (Bottom of loaf will sound hollow - but you won't know that til you take it out!)
