How to Make Zucchini Muffins
- Combine dry ingredients in a mixing bowl; make a well in center.
- Combine egg, zucchini, sugar, oil and vanilla, and 2/3 cup milk, mixing well; add to dry ingredients, stirring just until moistened. Stir in pecans.
- Spoon into greased and floured muffin pans, filling 2/3 full. Bake at 350 degrees for 22 minutes.
