Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 large egg, beaten
- 1 cup grated zucchini
- 1 1/4 cups sugar
- 2/3 cup milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 3/4 cup chopped pecans
How To Make zucchini muffins

Step 1Combine dry ingredients in a mixing bowl; make a well in center.

Step 2Combine egg, zucchini, sugar, oil and vanilla, and 2/3 cup milk, mixing well; add to dry ingredients, stirring just until moistened. Stir in pecans.

Step 3Spoon into greased and floured muffin pans, filling 2/3 full. Bake at 350 degrees for 22 minutes.
