Ingredients

  • 1/3 cup vegetable oil
  • 1/2 cup honey
  • 1 large egg
  • 6 ounces vanilla yogurt
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup shredded zucchini

How To Make zucchini muffins

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Line a muffin pan with paper liners.
  • Step 3
    Whisk the oil, honey, egg, yogurt, and vanilla together in a medium bowl until well combined.
  • Step 4
    Add the flour, baking powder, baking soda, and cinnamon to the wet ingredients. Mix together until combined.

    Fold in the zucchini.

    Fill muffin pan 3/4 full.
