Ingredients
- 1/3 cup vegetable oil
- 1/2 cup honey
- 1 large egg
- 6 ounces vanilla yogurt
- 1 1/2 teaspoons vanilla
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 cup shredded zucchini
How To Make zucchini muffins

Step 1Preheat oven to 350 degrees F.

Step 2Line a muffin pan with paper liners.

Step 3Whisk the oil, honey, egg, yogurt, and vanilla together in a medium bowl until well combined.

Step 4Add the flour, baking powder, baking soda, and cinnamon to the wet ingredients. Mix together until combined.

Step 5Fold in the zucchini.

Step 6Fill muffin pan 3/4 full.

Step 7Bake for 20-25 minutes until toothpick inserted in middle comes out clean.

Step 8Allow to cool in pan for 5 minutes before serving.
