    carrot cake mix (18 oz)
  • 1
  • 1/2 c
  • 1/4 c
    vegetable oil
  • 1-1/2 c
    shredded zucchini
  • 1/2 c
  • 1/2 c
    pecans, chopped

How to Make Zucchini Carrot Muffins


  1. In mixing bowl, combine cake mix, egg, applesauce and oil. Mix well.
  2. Stir in zucchini, raisins, and pecans. Fill greased or paper-lined muffin cups 3/4 full.
  3. Bake 350 for 25-30 minutes.
