zucchini bread or muffins
This recipe was given to me by a very dear old friend many years ago. It is so moist and yummy. Some will go in the freezer but it doesn't stay long.

Ingredients
- 3 - eggs
- 1 cup - brown sugar
- 1 cup - white sugar
- 1 cup - oil
- BEAT EGGS, SUGARS AND OIL TOGETHER AND ADD FOLLOWING INGREDIENTS
- 2 cups - grated zucchini
- 3 tsp - vanilla
- 1 cup - chopped nuts
- 1 cup - raisins
- 3 cups - flour
- 1/2 tsp - baking powder
- 1 tsp - baking soda
- 1/2 tsp - salt
- 2 tsp - cinnamon
- 1 tsp - nutmeg
How To Make zucchini bread or muffins

Step 1Beat well. Bake at 350 for one hour in 2 greased loaf pans or approximately 25 minutes in Texas sized greased muffin pans. Yields 12 muffins.

Step 2If you have some left over at breakfast time slice the bread and dip in beaten eggs (like french toast) brown in a little oil. Serve with your favorite jam or syrup.
