This recipe was given to me by a very dear old friend many years ago. It is so moist and yummy. Some will go in the freezer but it doesn't stay long.

Ingredients For zucchini bread or muffins

  • 3
    eggs
  • 1 cup
    brown sugar
  • 1 cup
    white sugar
  • 1 cup
    oil
  • BEAT EGGS, SUGARS AND OIL TOGETHER AND ADD FOLLOWING INGREDIENTS
  • 2 cups
    grated zucchini
  • 3 tsp
    vanilla
  • 1 cup
    chopped nuts
  • 1 cup
    raisins
  • 3 cups
    flour
  • 1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 tsp
    cinnamon
  • 1 tsp
    nutmeg

How To Make zucchini bread or muffins

  • 1
    Beat well. Bake at 350 for one hour in 2 greased loaf pans or approximately 25 minutes in Texas sized greased muffin pans. Yields 12 muffins.

    If you have some left over at breakfast time slice the bread and dip in beaten eggs (like french toast) brown in a little oil. Serve with your favorite jam or syrup.
