This recipe was given to me by a very dear old friend many years ago. It is so moist and yummy. Some will go in the freezer but it doesn't stay long.

Ingredients

3
eggs
1 cup
brown sugar
1 cup
white sugar
1 cup
oil

BEAT EGGS, SUGARS AND OIL TOGETHER AND ADD FOLLOWING INGREDIENTS

2 cups
grated zucchini
3 tsp
vanilla
1 cup
chopped nuts
1 cup
raisins
3 cups
flour
1/2 tsp
baking powder
1 tsp
baking soda
1/2 tsp
salt
2 tsp
cinnamon
1 tsp
nutmeg

How to Make Zucchini Bread Or Muffins

Step-by-Step

  • 1Beat well. Bake at 350 for one hour in 2 greased loaf pans or approximately 25 minutes in Texas sized greased muffin pans. Yields 12 muffins.
  • 2If you have some left over at breakfast time slice the bread and dip in beaten eggs (like french toast) brown in a little oil. Serve with your favorite jam or syrup.
