Ingredients

1 c
whole wheat flour
2/3 c
all purpose flour
1/3 c
sugar
4 tsp
baking powder
1/2 tsp
salt
1/2 tsp
chilli powder
1 1/2 c
all-bran orginal cereal ( like kellogg's)
1 c
skim milk
3
egg whites
3 Tbsp
vegetable oil
1 can(s)
( 8.75oz) whole kernel corn, drained
1/4 c
drained, chopped pimentos
2 Tbsp
chopped onions
1 to 2 Tbsp
chopped jalapeno peppers
1/2 c
shredded mozzarella cheese

How to Make Zesty Corn Muffins

Step-by-Step

  • 1Stir together flours, sugar, baking powder,salt and chilli powder. Set aside.
  • 2In a large mixing bowl,combine all-bran cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg whites and oil. Beat well.Stir in corn, pimentos, onions, peppers and cheese. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2- inch muffin-pan cups coated with cooking spray.
  • 3Bake at 400 about 20 minutes or until lightly browned. Serve warm.
    Makes 12 muffins
